Baked Oatmeal
Ingredients
- 2 eggs beaten
- 1 cup milk
- 1/2 cup coconut oil (or any oil/butter or applesauce)
- 3/4 cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 3 cups oatmeal
- spices/extracts (cinnamon, cloves, ginger, almond, vanilla, etc.)
- fruit (raisins, apples, cranberries, strawberries, bananas, etc.)
Ex spices/fruit: about 1/2 cup of chopped apples, 1/2 teaspoon cinnamon, a dash of cloves and a dash of ground ginger.
Mix all ingredients, except oatmeal and fruit, until well mixed. Add in oatmeal. Add in fruit. Put oatmeal in a greased 8x12 greased pan. Bake at 350 for 25 minutes. Let cool for a few minutes and serve with a little milk or cream.
